Chili-Lime Rotisserie Chicken Lettuce Wrap

« Chicken and Tomatillo Enchiladas

1 rotisserie chicken (about 2 1/2 pounds)
skin and bones removed, meat shredded
1 clove garlic, finely minced
1 tablespoon grated ginger
1/3 cup Asian-style sweet chili sauce
2 tablespoons fresh lime juice
2 tablespoons chopped cilantro
1/2 English cucumber, halved lengthwise,
seeded and cut into matchsticks
1 red bell pepper, thinly sliced
1 cup fresh bean sprouts
1 medium carrot, cut into thin strips
1 small red onion, halved and thinly sliced
1 head Boston lettuce leaves, separated

1. Place shredded chicken, garlic and ginger in a shallow, microwave-safe dish. Cover and microwave on high until chicken is heated through, 1 1/2 to 2 minutes. Add the chili sauce, lime juice and cilantro, and toss to coat the shredded chicken.
2. Arrange chicken, cucumber, red bell pepper, bean sprouts, carrot strips, red onion and lettuce on a serving platter. Let everyone assemble their own wraps. Squeeze with additional lime juice if desired.
